Find whole pieces of dried pasta. Avoid anything with a patterned surface or a lot of broken lines on it. This could cause it to crumble while cooking.

Modern food paste: look for smooth, uniformly coloured, undamaged items. It should appear dry, but it shouldn't be crumbly or brittle. Beware of any packages that contain liquid. You want the frozen pasta to be loose, not stuck together. Avoid it if it's in a very solid block or if any ice crystals are visible.

If you buy it in a very package, make sure to carefully read the directions and adhere to them for the best results. It's always better to slightly undercook food than to overcook it. Your boiled product should be flexible but firm.

 If you're preparing it in a casserole, you should undercook it because it will absorb the sauce and cook quickly in the oven. If you cook it, you'll end up with a bland, watery product that lacks flavour.
